Hibiki
A moment to unwind in the city.
At Hibiki in Sumida Ward's Ryogoku, diners can enjoy chicken chanko nabe courses featuring cartilage-studded chicken meatballs, sardine fishball hot pot, and seasonal multi-course kaiseki meals in relaxed private rooms.
01 / ABOUT THE PLACE
Tucked into a street corner near Ryogoku Station, Hibiki offers nourishing hot pots and meticulously prepared seasonal Japanese cuisine served across thoughtful set courses. In the evening, when the lingering buzz of sumo tournament crowds softens through the neighborhood, the restaurant provides a serene setting to unwind over drinks around a steaming communal pot.
One of the house staples is the chicken chanko nabe course, an expansive sequence that begins with an appetizer, sashimi, and a grilled dish before progressing to the centerpiece hot pot. Cooked in an elegant kombu dashi broth, the hot pot incorporates chicken meatballs textured with crunchy cartilage, striking a memorable balance between chew and savory depth. To conclude the meal, diners can choose between rice to make comforting zosui porridge or noodles to simmer in the dashi, capturing the concentrated flavors of the broth down to the last spoonful.
The pot options extend to the signature iwashi tsumire nabe made with sardine meatballs, as well as advance-reservation choices such as buri shabu featuring thinly sliced yellowtail and anko nabe monkfish hot pot, showcasing the best of seasonal coastal catches. For those preferring a meal without a pot, a seasonal omakase course offers a multi-course kaiseki experience highlighting raw fish, grilled specialties, and fried items. Draft beer and shochu are on hand to pair with the meal, alongside à la carte additions such as house-made rolled omelettes and thin sushi rolls to tailor the dining experience to your preference.
The interior provides private dining rooms and counter seating, where warm hospitality from the chef and proprietress allows guests to focus comfortably on food and conversation. Reserving ahead is the smoothest approach for dinner, making it a reliable choice for family gatherings and celebrations alike.
